The crop is harvested with great care and our efforts are dedicated to collecting the fruit and selecting those olives that are appropriate for creating an exceptional virgin olive oil.

TRANSPORTATION

The olives are transferred to the olive press daily and the oil is extracted through old crushing/pressing.

PROCESS

Every new batch is measured to determine the acidity of the oil produced. The olive oil is stored in special tanks under nitrogen controlled conditions at a controlled temperature.
