The crop is harvested with great care and our efforts are dedicated to collecting the fruit and selected those olives that are appropriate for creating an exceptional virgin olive oil.
The olives are transferred to the olive press daily and the oil is extracted through old crushing / pressing.
Every new batch is measured to determine the acidity of the oil produced. The olive oil is stored in special tanks under nitrogen controlled conditions at a controlled temperature
The process combines know – how and expert scientific approach with the unaffected manner olive oil has always been produced by our family.
